Coffee Cake Muffin Recipe

I always liked coffee cake, even as a kid! Follow the recipe below!


Your gonna need a few bowl for this (at least 3) and muffin cups or pam spray


Yummy Coffee Cake Muffins!


For the "muffin" part

1 1/2 cups all-purpose flour (I use Pillsbury)

1/2 cup Domino's Brown Sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup milk

Use less than 1/3 of a cup of coconut oil

2 large eggs

Ran out of eggs? (use a mashed banana or applesauce!)

(I tried using mayo and it came out too oily. But that is because I also used the coconut oil with it.)


Muffin Topping

  • 1/3 cup Dominoes White granulated sugar

  • 1/3 cup Dominoes light brown sugar

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 stick unsalted butter, melted (or 1/2 a cup!)

  • 1 1/2 cups all-purpose flour

3 bowls

1 can of Pam Spray (Butter--but if you have plain that is fine!)

Silicone spatulas


Instructions


  1. Heat up the oven to 375 degrees. If you have cupcake liners, go ahead and put them in a non stick muffin pan. If you don't have it, use your Pam spray!

  2. To make the top crumble, put your white and brown sugars, salt, cinnamon and medium bowl and mix it up well. Then add your melted butter with a drop of vanilla extract.

  3. Add flour and mix it up with a silicone spatula and set to the side.

  4. Get a separate bowl (Large) and add your baking soda, cinnamon, sugar, salt baking powder and, flour. Mix it up.

  5. ***REMEMBER Baking Soda and Baking Powder is different!

  6. Get another bowl and mix up your milk (or milk sub), coconut oil and eggs (or egg substitute).

  7. Take your wet mix and pour in with the "muffin" mix. Mix it up with your silicone spatula.

  8. Pour your batter into muffin tin leaving space at the top for your crumble! Fill it halfway of a litter over half.

  9. Place a generous amount of "crumb topping" on your muffins.

  10. Bake for at least 20-25 Minutes. But use a butter knife to poke the middle to see if its done.

  11. Remove muffins from oven and away from the stove

  12. Eat and enjoy!
